How to Store Grain On-Farm: Moisture, Temperature, Control

The two numbers that decide everything
Storing grain outside an elevator comes down to controlling two things: moisture and temperature. For wheat, the safe range is 12–14 %. Up to 14 % holds for a few months; for anything beyond six months, bring it down to 12–13 %. Temperature should sit below 15 °C, because below that threshold the development of most stored-grain insects effectively stops, and below 10 °C they go dormant. The two work together, and neither substitutes for the other: dry but warm grain spoils much as cool but damp grain does. This is why FAO puts post-harvest cereal losses at 5–15 % depending on infrastructure — and almost all of that spread comes down to whether these two numbers were watched or assumed.
Preparation: cleaning and drying
Before storage, clean the grain of dust, chaff, weed seeds and plant residue. Trash is not merely untidy — it carries more moisture than the grain does, clumps together, and forms the pockets where self-heating begins. Then dry to the target moisture. Natural ventilation works only in dry weather; a wet harvest needs a dryer or active aeration with warmed air. Do not dry too fast or too hot, which cracks the seed coat and costs you grade. After drying, cool the batch before it goes into store: freshly dried grain is warm, and a warm mass in a cool building condenses moisture at its surface, which is exactly where mould starts. A simple rule of thumb is that grain temperature should be close to store temperature before loading — a gap above 5 °C is already a risk. One further common mistake is mixing a new batch with an old one: the old grain almost always sits at a different moisture and is often already infested, so you compromise both at once.
Sealed containers or bulk
For volumes up to a few tonnes, sealed containers are simpler and safer: metal or food-grade plastic drums with lids, or heavy bags with a liner. The requirement is that they exclude moisture and rodents. For larger volumes bulk is cheaper but demands far more attention, because a large mass holds both moisture and heat. It needs a dry, clean base, a raised floor or pallets, and aeration that actually works — bulk without aeration is the most common way a batch is lost. Either way the store should be dark, cool, and free of sharp temperature swings, since fluctuation drives moisture through the mass and concentrates it under the surface.

Monitoring: what to check, and how often
Set a schedule and keep to it — regularity saves batches, not equipment. Every fortnight, take temperature at several points through the depth of the mass rather than only at the top, because a self-heating pocket starts inside and is invisible from the surface. A rise of 2–3 °C between checks is a signal to act immediately, not to keep watching. Measure moisture with a meter, not by hand. Judge the smell: musty or sweetish means mould has started. Sieve a sample — live insects or a characteristic floury dust indicate infestation. Check more often in summer, because above 20 °C a pest population can double within a few weeks. Write the readings down rather than trusting memory: a trend across three or four checks shows a problem far earlier than any single measurement does. A plain logbook with the date, the sampling point, the temperature and the moisture is enough to make that trend visible.
Pests: what works and what does not
The most effective protection is cold and dry, not chemistry. Grain weevil, flour beetle and mites develop above 15 °C and above about 13 % grain moisture, so removing those conditions beats treating the consequences. Clean and air the store thoroughly before a new batch goes in: old grain left in cracks and seams is the main source of re-infestation. Folk remedies such as bay leaves have no demonstrated effect at farm volumes and are no substitute for controlling conditions. If infestation has already taken hold, use only products approved for grain intended for food, strictly to the label — exceeding rates makes the batch unsaleable.
