In Ukraine, winter-crop grain fill runs June–July (Forest-Steppe, Polissia), late May–June (South). Temperatures >30°C during grain fill shorten it 5–10 days, cutting TSW 8–20% (the 'forced ripening' effect). Water stress at BBCH 70–85 is one of the most significant yield-loss drivers in the Steppe and southern Forest-Steppe. Adaptation: (1) early varieties with short stem elongation — avoid hot late July; (2) flag-leaf topdressing (Y-leaf) at BBCH 39–51 — builds N reserve for grain fill; (3) T3 fungicide (BBCH 61–65) against Fusarium head blight + extended leaf activity. Grain quality forms at different fill moments: protein and gluten — mainly at milk–waxy stages (BBCH 75–83); starch content — at waxy stage. Premature harvest (before BBCH 89) lowers TSW and product outturn.
